Riposte Reserve Adelaide Hills Pinot Noir is only made in years deemed to be exceptional for Adelaide Hills Pinot Noir. The fruit is selected from premium high altitude sites.
The grapes are cold soaked and hand plunged in open fermenters. To create complexity, a portion of the fruit is vinified as whole bunches while the remainder is fermented as whole berries, destemmed but not crushed.
The wine sees full malolactic fermentation in one third new French oak barrels followed by 8-10 months of maturation. Just a few barrels comprise the final blend, which is aged further in bottle prior to release.
Deep vermillion, Riposte Reserve Adelaide Hills Pinot Noir is a rich wine with earthy notes, fine tannins and a long finish. Cellaring potential is seven years.
